Tokyo Monster Steak

My pal Curtis — one of my oldest friends, a real-life cowboy and a legit carnivore — is one of the only reasons I still check Facebook from time to time. You see, Curtis likes to send me videos to my Facebook account. Videos of meat.

Examples of these have included “Fastest Tacos in the World — Tijuana” and “Jack’d Up Smoked Meatloaf.” Most recently, he sent me a video called “Massive Ribeye Steaks for Beasts”. It was produced by a group of Tokyo-based foodies who call themselves Hachiko District, and was shot at a restaurant called Monster Grill in that city’s Ebisu district.

Monster Grill is famous for two things — a 7-lb pyramid of six hamburgers which, if you can finish them in 30 minutes, you don’t have to pay your $75 bill; and a giant 2-pound, 2 inch-thick ribeye steak that is pounded down to one inch, grilled, sliced and slathered with creamy garlic sauce and served with a mound of rice. I watched the video. And it sounded pretty darned good. That garlic sauce was triggering something carnal in me. This, I had to try.

Now short of a quick research trip to Tokyo that seemed unlikely to pass the familial budgeting committee, I hit the internet. I have a deft hand with a ribeye, no help was needed there. But my search for “Tokyo Monster Grill garlic sauce recipe” yielded nothing, so I set about figuring it out myself.

Somewhere among the various videos and Yelp reviews, I saw someone describe the sauce as “mayonnaise-based”. Perfect for a blog called “Skinny Girls and Mayonnaise,” right? I didn’t call it that because I had a fear of mayonnaise. As far as the eye could tell, the sauce appeared flecked with orange. How does one fleck a creamy mayonnaise sauce with orange? Roasted chiles de arbol seemed like the answer.

I fried a head of garlic, pureed it with mayo and a few other ingredients, and nailed it on the first try. Does it taste like the garlic sauce at Monster Grill in Tokyo? I don’t know, I’ve never been there. But it looks pretty similar, and I hope for their sake that their’s tastes as good as mine.

BTW, you can also slather the garlic sauce all over that 7-lb burger tower, if you’re ever in Tokyo and really hungry. Or you could just make the steak like I did, and that might just be enough.

Tokyo Monster Steak with creamy garlic sauce
serves 4

2 lb. ribeye steak
1 large head garlic
1/2 cup grapeseed oil
4 dried chiles de arbol, seeded
1/2 cup Japanese kewpie mayonnaise
1 tbsp. rice wine vinegar
1/2 cup water
salt & pepper to taste

Pound your ribeye steak with a meat mallet until it is about 1-inch thick. Season with salt and pepper. Pre-heat oven to 350F.

Make your garlic sauce:

Break the head of garlic into cloves, and remove skin. Heat grapeseed oil over medium-high heat, and fry the garlic cloves, turning once or twice, until golden. Remove garlic from pan, and pan from heat. While the pan is still hot, toast the chiles for about 30 seconds in the hot oil, and then remove.

Place garlic cloves, reserved grapeseed oil, chiles, mayonnaise, vinegar and water in a blender and puree until smooth. Season to taste with salt.

Heat a cast iron skillet on high heat until it begins to smoke. Sear your steak for 90 seconds, and flip. Sear for another 90 seconds. Then place the pan in the oven. Cook to desired doneness — 3 minutes for rare, 5 for medium rare, and you’re on your own after that.

Remove pan from oven, and steak from pan to a cutting board. Slice across the grain into slices about 1/2-inch thick. Lay out sliced steak on a platter, and drench with garlic sauce. Serve with Japanese rice and more garlic sauce on the side. (And maybe a salad, what the hell.)

MSG = Monosodium, Good Mate!

I was at a pizza & wine cookoff recently — me with a few bottles of my family wine versus my pal Craig, with his family wines, making pizzas in the wood-burning oven of my friend and Craig’s brother-in-law, Chris. Basically, dads showing off for their and their friends’ wives.

Somehow we got on the subject of foods-that-used-to-be-taboo-that-have-been-redeemed — perhaps we were talking about eggs from each of our backyard chickens. Maybe it was butter, I can’t remember. I said aloud, “They’ve even determined that MSG is harmless.” Chris looked surprised. “Really??” However, his mother-in-law — his wife Mary’s mom — who had also joined us, looked aghast.

“Oh no!” she said, “MSG is terrible. It gives me headaches and irregular heartbeat and flushed skin!!”

I didn’t follow up.

A few weeks ago, I was cooking a test dinner of a sample menu for a briefly-mentioned-in-my-last-post-restaurant-possibility with some shall-not-yet-be-mentioned celebrity dinner guests who would be involved. My potential-restaurant-partner quizzed the guests about what their favorite kind of chicken was, and one of them replied, “KFC.”

Now I will pause here briefly to say that anyone who has ever told you they don’t like KFC is lying to you. It is @#$%ING delicious. Why? Well, there are those 11 secret herbs and spices. There is also the pressure frying which keeps the meat tender and thoroughly cooked without overcooking the crust. But there is also a fair helping of MSG.

My MSG

The bad rap MSG got from the beginning was largely bogus. It’s simply a protein isolate attached to a sodium molecule. The bad rap also dates to the 1960s, when people reported experiencing strange symptoms after eating Chinese American food. In a famous article exploring “Chinese Restaurant Syndrome,” the author proposed a number of possible suspects — huge quantities of sodium, equally heroic amounts of oil… or, a heretofore unknown substance called monosodium glutamate. It was the latter that captured the public imagination — especially after some well-meaning scientists injected pregnant mice with 30,000x the amount of MSG any human could possibly consume and discovered problems in the resulting offspring.

If you are afraid of MSG, consider that you likely consume half a gram of the stuff daily in the foods you eat. That’s not counting naturally occurring MSG, which is chemically the same as the additive, and found in foods from mushrooms to cheese to fish.

I wanted my guests to really like the chicken. So I purchased a bag of MSG.

I was a little ashamed as I brought my contraband to the check-out line. But then I remembered I was at the Japanese market, and the Japanese still dig MSG. They were the ones who brought it to the world! Anyway, in terms of my meal, it would not be the main component of the dishes I was making; rather, it would merely enhance the flavors of garlic, salt, sugar, pepper, spices and so forth. I used a very small pinch in my spice mixture, a bit in my brines, etc. How was it? Delicious — and a bit better than it would’ve been without. My celebrity guests were on board 100%.

And I am now onboard too. With MSG.

Don’t shame me, well-intentioned food extremist. I realize yours is a small, flavorless world in which your self-righteous indignity to my defense of the world’s most hated food additive will provide you a temporary sense of purpose. I give you that. With a side of kale.

Just give me a KFC thigh and wing, please. And some kung pao chicken on the side.

The Japanese Make the Best Things

Sometimes I think the Italians make the best things. And then I change my mind, and decide it’s actually the Mexicans who make the best things. Other times, I’m pretty darned sure it’s the Japanese.

This is one of those times.

Kaiseki in the Rain

My friend Brian, he of raw milk and smuggled French cheeses, lives in a Japanese-influenced mid-century modern home in Pasadena. Approaching the house from the street, you come up a few steps to a large door framed by stained glass windows. Inside the door is not the interior of the house, but a raised, covered wooden deck bridge through a Japanese garden that connects front entrance and front doors.

A couple years back, upon our first visit to his house, I commented that I wanted to do a winter kaiseki dinner on the bridge during a rainstorm.

I often present friends with interesting home situations with my wild ideas about dinners I want to do there (such as the winter storm seafood dinner I wanted to do at our friends’ Steve McQueen Malibu beach house), but rarely receive more than a polite nod. But Brian seemed enthusiastic. Then — now! — a couple years later, I receive a text from Brian. “We missed the storm! But there’s rain in the forecast for next weekend. Shall we do our dinner?” He didn’t have to ask me twice.

It was pouring in Topanga, as if someone had taken a knife and split open the swollen belly of the black cloud above, when we left for Pasadena. But sometimes the rainclouds get stuck on our coastal mountains, and the sky was blue by the time we reached Pasadena. Nonetheless, Brian had set out his traditional kotatsu table onto the bridge surrounded by paper lanterns and plum blossoms, I had brought a bag full of ama ebi, striped bass, wagyu beef, simmered duck and other delights, and we would eat well.

The front door was opened not by Brian, but by his new friend Makkie, a very giggly and beautiful Japanese woman. This was a trap, I immediately concluded — like some domestic version of “Iron Chef,” a test of my meddle. You think you’re a Japanese chef, hot shot? I imagined Brian thinking to himself. Try cooking for a REAL Japanese person! But I didn’t shrink from the challenge — it was ON! I’d cooked French food for French people, Italian for Italians, Mexican for Mexicans… I’d even done chicken Kiev for our Ukrainian friends. I wasn’t easily intimidated.

We drank Japanese beer in the kitchen and then moved to the kotatsu. The blue skies had clouded over, and it was drizzling. The first course was raw ama ebi sweet shrimp and striped bass sashimi with herb flowers and a salad of greens — miner’s lettuce, sour grass and mustard greens — I had foraged that morning in Topanga.

Oishi!” Makkie giggled, covering her mouth with her hand. Delicious, Brian translated. One point for the challenger!

Next we moved on to duck legs and thighs that had been long-braised in apple cider, sake and dashi broth, cubes of kabocha pumpkin lightly cooked in the finished broth. More “oishi,” more points for the chef.

From our beer, we had also moved on to sake. Makkie had brought a good bottle, and Brian had several to contribute as well. I once did a post on the evocative names the Japanese give their sakes — “Wandering Poet” or “Mansion of Dreams” — and while I didn’t catch the names of these particular sakes, each was more delicious than the last.

The kaiseki dinner, for those not in the know, is a formal and highly ritualized occasion in Japan. It is sort of the Japanese version of — and, I would hazard, the precursor to — the popular Western “chef’s tasting menu”: a series of small, seasonal dishes exquisitely prepared and presented. Some of the formality less typical of a Western meal comes from the prescribed ordering of the dishes. I’ve never been able to quite unravel precisely the rules and regulations, but it goes something like this: you begin with sashimi, followed by a simmered dish, followed by a grilled dish, followed by a steamed dish, followed by…

By nature, I like to break with tradition. So I took the spirit of kaiseki, with its attention to detail and season, and abandoned the formality. My tempura course — sorrel leaves, wild mushrooms, shiso leaf with sea urchin — might’ve jumped ahead of my grilled course. And where in the instructions does it say anything about a noodle course!??

Oishi” was my guiding principle for the night.

During my preparation of one of the courses, Makkie came into the kitchen carrying plates. She wanted to know how I learned Japanese cooking, where I got my ingredients. She wanted to watch and learn. Yes, I believed, the challenger had won the competition.

The promised rain still hadn’t come. We’d had a beautiful dinner, and after the final course of wagyu zabuton steak with broiled eggplant and fresh wasabi raw butter, we sat luxuriating under the heated blanket that covered our legs. The roar of rain pouring down all around us while we ate was not to be.

“It was a test run,” Brian said.

The kids were tired, it was time to go home.

It was, of course, still raining when we got home to Topanga. The clouds had gotten stuck. But then I received a text from Brian:

“Began raining just after you left. Makkie and I just chilled out on the deck and enjoyed the rain.”

I was glad someone got to.

Braised duck with kabocha pumpkin
serves 4

2 legs & thighs duck
1 tsp. vegetable oil
salt & pepper
1/2 cup dashi broth
1/2 cup apple juice
1/2 cup sake
1 cup cubed kabocha pumpkin

With a cleaver, remove the knobby bone from the end of the duck leg (chop it off) about 1/2 inch from the end. Chop the leg/thigh into 2 or 3 sections, depending on preference. Season liberally with salt and pepper.

In a small saucepan, heat the tsp. oil over medium high until it begins to smoke. Sear the duck, skin side down as applicable, until brown, about one minute. Turn over and sear the other side.

Reduce heat to medium and add three liquids. Bring to a simmering boil, lower heat to low, cover and cook for 90 minutes.

Remove from heat. Let cool, then remove duck and strain stock. (This can be done the day before serving.)

Place duck pieces under a broiler and broil until golden brown, 5 to 10 minutes depending on heat and proximity to heating source. While duck is broiling, place stock in a small saucepan over medium heat. When it begins to simmer, add pumpkin cubes and cook until tender, about 5 minutes.

Scoop some stock and pumpkin cubes into each of 4 shallow bowls. Top with 1-2 pieces of duck and serve.
